Recently, Neena took to Instagram to share a quick and easy lauki recipe. Lauki, also known as ghiya or bottle gourd, is a nutritious and versatile ingredient perfect for summer. Neena Gupta starts by saying that she has grated the lauki and soaked the rice to keep them ready. She proceeds to add the grated ghiya to a vessel on the stove, followed by handfuls of the soaked rice. She suggests adding only a little water to the vessel because the lauki is naturally packed with water. As it cooks, she prepares a tadka (tempering) of cumin seeds, coriander seeds, garlic cloves and curry leaves in ghee. She spices them up with some red chilli powder. She adds this mixture to the vessel with the lauki and rice. She combines all the ingredients thoroughly and then serves herself a portion.

She tells us that this is a Bihari dish called Lauki Jabar. Towards the end, she admits that she had forgotten that this delicacy typically has milk added to it once the lauki and the rice are cooked. “But without milk also it is nice,” Neena Gupta declares. Watch the complete video below:
